Give Day 15: Granola Recipe
Caring for someone’s nutrition during the Holidays is a true gesture of love and/or friendship. There is so much pressure on everyone to “do” and our lists are so long, it is often challenging to take care of ourselves. Why not do what you do best? You already know a lot about Eating Clean, can find your way decently in the kitchen and have a good idea of what kinds of nourishment makes sense during these busy times, so today, being a Sunday when most of us have a little more time, is the perfect day to give the gift of a homemade brunch. To that end, last night my daughter, Kelsey-Lynn, made a beautiful and simple (read, easy) granola with gluten-free oats and delicious bourbon vanilla. Create a yogurt parfait by ladling three generous dollops of full fat, Greek yogurt into the bottom of a tumbler or a colourful bowl, top this with 1/4 cup of homemade Christmas Granola (recipe follows) and add a bounty of colour by loading mixed berries over all. Then drizzle with maple syrup. Complete the meal with a few hard-boiled, organic, free-range eggs. Figs also make a wonderful topping and are in season this time of year so this morning figs will find their way on top of my parfait along with brilliantly coloured pomegranate seeds. It's such a pretty dish it’s hard to be in a bad mood.
The entire preparation takes very little time and won’t overly tax your budget. The gesture however, is filled with love. The person or people you give this to cannot fail to feed your positive spirit and that, after all, is what this festive season is all about.

HOLIDAY GRANOLA RECIPE
3 cups gluten-free rolled oats (Bob’s Red Mill has a gluten-free variety) 1/4 cup lightly ground flax seed, not meal 1/4 cup wheat germ 1 cup raw, slivered almonds 1 cup raw pumpkin seeds 1 cup dried cranberries (dried cherries are also delicious but harder to find) 1 teaspoon unrefined sea salt 1 teaspoon ground cinnamon 1 teaspoon ground cardamom 1/4 teaspoon ground nutmeg
Combine all in a large mixing bowl.
1/2 cup natural honey (I buy local honey) 1/4 cup maple syrup 2 Tablespoons unsulfured molasses 1 Tablespoon bourbon vanilla (smells like Christmas and homemade baking) 2 Tablespoons coconut oil 1/4 cup espresso (yes!)
1. Preheat oven to 300 degrees F. Line large baking sheet with unbleached parchment paper.
2. Whisk wet ingredients in a bowl.
3. Combine wet and dry ingredients in a large mixing bowl using clean hands to mix. Spread mixture in a thin layer on prepared baking sheet.
4. Bake in a 300 degree F oven for 20 minutes or until golden brown. The smell alone is heavenly. The taste is divine.
5. Remove from oven and let cool. Pour into air tight container.
