Start Here Diet Challenge - Day 13 - Kohlrabi

What the heck is kohlrabi? Have you ever wondered? It's a member of the turnip family that can be eaten cooked or raw.

Today's prep is one of my favourite ways to do any root veggie... Roasted!

Roasted Kohlrabi

Ingredients:

1.5 lbs kohlrabi 1 Tbsp coconut oil 1 head garlic, broken into cloves, skin on 1 onion chopped into large chunks 1 tsp cumin 1 tsp tumeric Dash of sea salt & freshly ground black pepper

Methods:

1. Preheat your oven to 450 degrees Fahrenheit. Prepare a baking sheet with a piece of parchment paper.

2. Prep the kohlrabi by trimming the ends off. Then peel the green outer skin off with a knife or veggie peeler (a good quality peeler should do the trick). Then dice the kohlrabi into equal chunks.

2. In a medium bowl, combine diced kohlrabi, garlic cloves, onion chunks, coconut oil, and spices.

3. Spread out onto your baking sheet. Bake for 35 minutes.

P.S. Squish the garlic gloves out of their skins & enjoy spread on your kohlrabi. Yum!
