7 Citrus Salad
This invigorating citrus salad is like a bowl of sunshine! Ideal for heart health and super refreshing, this salad can be customized with whatever in-season citrus you happen to have on hand! The extra kick of mint and lime juice really gives it a snap you will LOVE! Keep this one handy for your next spring brunch or picnic. The 7 Citrus Salad also happens to be vegan, raw, and sugar-free so it’s a perfect side to a Meatless Monday meal. Sides built from naturally sweet fruit satisfy the desire for sugar. INGREDIENTS: • 1 navel orange, peeled and sectioned • 2 clementines, peeled and sectioned • 2 satsuma mandarin oranges, peeled and sectioned • 1 blood orange, peeled and sectioned • 1 red grapefruit (pink works also), peeled and sectioned • 1 lime • 2 Tbsp (30 ml) finely chopped fresh mint leaves
PREPARATION: 1. Using a knife, or by hand, remove peels from clementines and satsuma oranges. Pull apart sections, cut into bite sized pieces and place in bowl. Using a knife, cut away peel of navel orange, grapefruit, and blood orange. Then, using a paring knife, cut in-between membranes to remove fruit segments. Add segments to bowl. Add mint. 2. Squeeze half of the lime on top of the citrus and mint mixture. 3. Toss to combine and refrigerate for about 15 minutes before serving.
Ugli fruit, pomelo, or tangelo would also work in this salad, so don’t be afraid to give them a try the next time you pass them in the grocery store! Replacing the lime juice with lemon juice would also be a lovely modification. Go wild with this beautiful salad and try whichever combination of local, seasonal citrus you like!
