Breakfast Tacos with Cheesy Hemp Scrambled Eggs
Give me a breakfast sandwich any day and I'm a happy, clean eating
woman. Loaded with eggs and goodness, breakfast is good again.
Ingredients
- 2 large organic eggs
- 1/3 cup hemp seeds
- 1 Tbsp milk
- 1 tsp chopped fresh cilantro
- Fresh ground black pepper
- 1⁄2 tsp unrefined sea salt
- 1 Tbsp coconut oil
- 4 Tbsp goat cheese
- 2 avocados – peeled, pitted and mashed with a fork
- 2 x 10” Flour tortillas, warmed
- 1 medium ripe tomato, chopped and seeded
- 2 Tbsp salsa
Instructions
1. Whisk eggs, hemp seeds, milk, salt, cilantro and pepper together.
2. In a medium skillet melt coconut oil over medium high heat.
3. Add egg mixture and scramble eggs until set.
4. Place tortillas on 2 plates.
5. Place 2 tablespoons goat cheese on each of the tortillas along with half of the mashed avocado.
6. Place half of egg mixture in the middle of each tortilla.
7. Top each tortilla with half the tomato mixture and 1 tablespoon salsa.
8. Roll up the tortilla burrito style. Serve immediately.
