Comfort Food Casserole
Ingredients
- 3 Tbsp extra virgin olive oil
- 1 medium, yellow onion, peeled and chopped
- 2 cloves garlic, chopped or grated
- 4 stalks celery + leaves, chopped
- 4 carrots, peeled and chopped
- 1 pound ground turkey - organic, grass-fed if possible
- 8 sun-dried tomatoes, drained and chopped
- 28 ounce can crushed tomatoes
- 2 Tbsp dried sage, crumbled
- 2 tsp dried oregano, crumbled
- 1 tsp USS (unrefined sea salt)
- Freshly ground black pepper to
- taste
- 14 ounces brown rice ziti (or other pasta)
- 2 large eggs
- 2/3 cup plain kefir
Instructions
- Preheat oven to 350F degrees.
- Heat oil in medium skillet over medium heat. Add onion, garlic, celery and carrots. Sauté for several minutes until soft.
- Add ground turkey and cook until browned.
- Add sun-dried tomatoes, crushed tomatoes, purée and herbs and spices.
- Let all simmer on low for about 20 minutes, uncovered.
- Cook pasta according to package directions.
- Whisk together eggs and kefir and pour into bottom of ovenproof casserole dish.
- Add cooked pasta and toss in egg mixture.
- Add ground turkey mixture and stir until well combined.
- Cover dish with a sheet of crumpled parchment paper and place in hot oven.
- Bake for 30 minutes. Serve hot.
