Kelp Noodle Salad
Ingredients
- Ingredients for Dressing:
- 3 Tbsp Raw APPLE CIDER VINEGAR
- 1 Tbsp Low sodium tamari
- 1 Tbsp Maple syrup
- 1 clove Garlic, minced
- 1⁄2 tsp Grated ginger
- Ingredients for Salad:
- 1 package KELP noodles
- 2 cups Shredded carrots
- 1 cup Snow peas
- 1-2 Scallions, trimmed and sliced thin on the diagonal for garnish
- 1 bunch PARSLEY, chopped fine
- 6 Mint leaves, chopped fine
- 1 tsp Each unrefined sea salt and black pepper
- 2 tsp Black SESAME SEEDS, for garnish
- 2 Limes, cut into wedges, for serving
Instructions
1. In small Mason jar combine all dressing ingredients and shake well. Set aside.
2. Rinse kelp noodles under running water to soften. Drain.
3. Place kelp, carrots, snow peas, scallions, parsley, mint leaves and salt and pepper in large salad bowl.
4. Add dressing and toss to coat.
5. Sprinkle sesame seeds on top and serve with lime wedges.
