
Breakfast Bars
Ingredients
- ½ cup whole spelt flour
- 2 Tbsp oat bran
- 2 Tbsp coconut sugar
- ¼ tsp baking soda (I like Bob’s Red Mill)
- ¼ tsp baking powder (aluminum free, Bob’s Red Mill)
- ¼ tsp ground cinnamon pinch nutmeg
- ¼ tsp unrefined sea salt 2 Tbsp ground flaxseed
- ¼ cup hemp hearts
- 1 ½ cups raw, unsalted almonds (coarsely chopped) - or other nut or seed of your choosing
- ½ cup each dried cranberries, cherries, unpitted dates, currants
- 2 whole eggs
- 1 tsp vanilla extract
Instructions
- Preheat oven to 325oF. Prepare 8” x 8” baking pan by lining with parchment paper.
- In large bowl, whisk together flour, oat bran, coconut sugar, baking soda and powder, spices and salt. Mix well.
- Add flax, hemp, almonds or other nuts, dried fruit and mix well.
- In separate bowl beat eggs and vanilla. Add to fruit and nut mixture and mix thoroughly.
- Scrape into prepared pan, pressing flat to edges. Bake on center rack of oven for 30 minutes.
- Remove and cool slightly then cut into squares.
