Tosca Reno's Mac & Cheese

Yield: 6-8 servings

Cook Time: 30 minutes
Total Time: 55 minutes


  • 2 Tbsp olive or coconut oil
  • 2 Tbsp whole wheat flour
  • ¾ cup cooked, mashed sweet potato
  • ¾ cup unsweetened nut milk of your choice, warmed through
  • 1 cup full fat, plain Greek yogurt
  • 2 Tbsp very old Parmesan cheese from a block not pre-grated
  • 1 tsp unrefined sea salt 1 tsp white pepper
  • ¾ pound whole grain elbow macaroni


  1. Cook macaroni noodles according to pkg instructions.
  2. Drain and set aside.
  3. Meanwhile heat oil in medium skillet over medium high heat.
  4. Add flour and using a wire whisk, make a roux. Add warm milk gradually to make a sauce.
  5. Add mashed sweet or regular potato and keep stirring.
  6. Add grated Parmesan, yogurt, salt and pepper. Sauce should be thick.
  7. Add cooked, drained pasta and toss to combine.
  8. Serve hot.
