Turkey Meatballs

Ingredients

  • 3 Tbsp. Oat bran
  • 1 Tbsp. Wheat germ
  • 1 Tbsp. Ground flax seed (it must be fine)
  • Pink Himalayan Salt and black pepper
  • 1 large Whole egg
  • ½ c. Chicken stock
  • 1 Onion chopped fine
  • 2 stalks Celery chopped fine
  • 4 cloves Garlic passed through a garlic press
  • 1 tsp. Oregano, poultry seasoning, Pink Himalayan Salt, black pepper (each)
  • 1½ lb. Lean ground turkey (make sure there is no skin in your mix)
  • Olive oil for hands

Instructions

  1. Preheat over to 350F. Prepare a baking sheet by lining it with parchment paper.
  2. Place oat bran, flax, wheat germ, oregano, sea salt and pepper and chopped vegetables in medium mixing bowl. Mix well. Add egg white and milk or stock and mix well. Add ground turkey and mix until combined. Don't over mix or the meatballs will come out hard and rubbery.
  3. Coat clean hands lightly with olive oil. Make meatballs and place on baking sheet. Place in hot oven and bake for 15 to 20 minutes. Keep an eye on your oven and make sure the meatballs don't become too brown. They should just be golden brown. When done remove from oven and set aside until you are ready to serve.
